If you follow me on Instagram you would see that I’m a vegetarian. Coming up on 1 year in March! Any who, I thought it would be cool to incorporate my veggie life into the blog. I mean it is about my life, LOL. Here’s a great dish that I whipped up that was super easy! Spinach Pancakes with Roasted Brussels Sprouts and Red Potatoes.
The roasted brussels sprouts and red potatoes are two recipes that I combined to one and did my own thing. Here’s what you will need:
3 medium sized red potatoes
2 cups of brussels sprouts
2-3 tablespoons olive oil
all purpose seasoning
2 teaspoons minced garlic
Ok so first let me just say that I like to experiment and not fully follow directions for easy recipes. So all that stuff above with measurements was for y’all! LOL I just estimate! Pre heat your oven to 425 degrees. Dice the potatoes and cut your brussels sprouts in half. In a large mixing bowl, throw in all your spices and oil. Then dump in your potatoes and brussels sprouts, cover it and shake it up! Line a baking sheet with foil and spread your mixture on it. Cook in oven for 30-35 minutes. Make sure and watch your veggies as theY cook! You want them a little crispy.
I didn’t make them thangs! LOL! I got them goodies from Whole Foods. They’re called Dr. Praeger’s Spinach Pancakes. Now they do contain egg whites so they are not vegan friendly. I’m a vegetarian so I’m not tripping on that. 🙂
This meal was soooooo good! I made those roasted veggies for a whole week! My husband loved them! He doesn’t even like brussels sprouts! LOL!
